Recipe for Doughnuts

I am having trouble adding images to my cooking blog so I am putting this recipe on this blog.  I stayed up until 10:45 pm. last night frying up doughnuts...I should have started earlier... I think I started making them at 6 p.m. Most of the time was waiting for them to rise and because I started them so late, I didn't have time to let them rise as much as they should have so they were little. I cut this recipe in half because it makes 10 dozen doughnuts. because my doughnuts were so little, I got more than 5 dozen. I made about 78 doughnuts. Kalli helped me, I couldn't have done it without her. So here is my recipe...actually from my mom who got it from our neighbor Colleen Hilton:

Colleen's Doughnuts
1 cup shortning (1/2 cup shortening with me halving the recipe)
2 pkg yeast dissolved in  1/2 c warm water (I used one tsp halving this recipe)
5 eggs (I used 3)
1 tsp lemon extract (i used one drop lemon essential oil)
1 tsp vanilla (I used 1/2 tsp)
1 cup sugar (I used 1/2 cup)
2 cups mashed potatoes (the flakes in the can...I used 1 cup)
4 cups milk (I used 2)
1 T salt (1 1/2 tsp of salt)
12-14 cups flour (I used six cups)

Directions:
Scald milk. Put the shortening in the milk to melt.  Pour scalded milk in mixing bowl-add salt, sugar, yeast and enough flour to make batter.  Add your potatoes, beaten eggs, flavorings and enough flour to make a soft dough.  Let rise double...punch down and roll out. Cut out...let rise again....Drop into hot oil raised side down. Make glaze.
